Chickpea Chocolate Chip Cookies

Listen, I know that sometimes you just want a chocolate chip cookie. Not a protein bar. Not a “clean” square. Not something that tastes like compromise. A simple cookie.
And if you’re anything like me (or like many of the women I work with) the sweet tooth is real. But so is the desire to feel good after eating it.
Not bloated, regretful or back in the “I’ll start over Monday” cycle.
This is why this recipe became a staple in my home last year. And once you try it, you’ll understand why.
Why Chickpeas?
I know. It sounds strange.
But chickpeas are one of those foods that quietly do the heavy lifting. They take on whatever flavor you give them. They blend into a smooth, creamy base. And they add fiber which helps satisfy you.
This isn’t the kind of cookie where you eat four and still feel like something’s missing. This one is balanced, filling and fully satisfies that sweet craving. And just in case you’re wondering… no, you don’t taste the chickpeas.
The Protein Upgrade
I added protein powder to this recipe for two reasons:
To make it more satisfying.
To improve the texture.
And here’s a reality I had to face with protein powders, not all of them behave well in baking. Some are chalky, some overpower the flavour, some turn recipes dry.

Chickpea Chocolate Chip Cookies
Portions: 8–10
Prep: 10–15 minutes
Bake: 12–15 minutes at 350°F
Ingredients
1 can chickpeas, drained and rinsed
⅓ cup natural peanut butter
¼ cup maple syrup
⅓ cup flour (oat flour works well if needed)
1 scoop vanilla protein powder
1 tsp vanilla extract
¼ cup chocolate chips
Dash of sea salt flakes
Directions
Blend the chickpeas in a food processor until smooth.
In a bowl, mix the wet ingredients together until well combined.
Add in the dry ingredients and mix until you reach a cookie dough consistency.
Fold in the chocolate chips.
Form into 8–10 balls and place on a baking sheet.
Bake at 350°F for 12–15 minutes.
Sprinkle with sea salt for the perfect finishing touch.
Let them cool slightly before eating — they firm up as they sit.

This isn’t about making a “healthy” cookie.
